After depulping, the parchment was transferred immediately to a dark room for drying, followed by 21 days of controlled-temperature dehydration. Minimal shaded drying ensured an even moisture content before the coffee rested for a further 21 days in GrainPro bags at a stable temperature for stabilization.\u003c\/p\u003e\n\u003cp\u003eFinca Soledad is located on a picturesque mountainside overlooking a beautiful valley through which the Intag River flows. Pepe, who wanted to retire from his career as a mountaineer and researcher and reconnect with the earth, bought the four-hectare land in 2010, which seemed perfectly suited for this purpose. Later, he came to know and love coffee, and thus began his new life as a producer of great specialty coffee. The area around Pepe is beautiful and lush but was deforested in the past, and Pepe and his team are working hard to replant the land with trees. To date, they have planted about 25,000 trees, and the place is slowly returning to the flourishing, lush paradise that Pepe wants to enjoy in peace. Coffee cultivation was not always easy and presented Pepe with some challenges. But gradually, Finca Soledad became more sustainable and a place of peace and well-being for all who work there. When asked what makes his farm so special, Pepe replies: \"This is my life, here I find peace.\" In a land that exudes inner peace and is nourished in return by the people who live there, it is no wonder that the aromas created here are something special.
